Advanced glycation end products (AGEs for short) are complex, oxidant compounds created when simple sugars crosslink with proteins or lipids through non-enzymatic reaction. AGEs affect nearly every type of cell and molecule in our bodies, and the formation of AGEs is a normal part of the aging process within the body. We consume AGEs on a daily basis, often through cooked foods.
